Carefully slice down the length of the date, leaving the date still intact, but so that you can remove the pit.
Gently open and slightly flatten the date on a parchment paper lined baking sheet or plate. Fill with a teaspoon of crunchy peanut butter, then press a pretzel on top.
Transfer the dates to the freezer for 15-30 minutes, or until the dates are hardened enough to dip into melted chocolate.
To a small, microwave-safe bowl, add chocolate chips and coconut oil. Melt in 20-30 second intervals, stirring in between each interval, until all the chocolate chips have melted.
Dip the semi-frozen dates into the melted chocolate, carefully tapping away excess and using a toothpick to scrape more of the excess chocolate off of the bottom of the date. Place the chocolate covered date on the parchment paper and, if desired, sprinkle with flaky Maldon sea salt.
Alternatively, if you don't want to fully dip the dates in the chocolate, you could also drizzle chocolate over the stuffed dates.
