Ingredients

teaspoons
extra virgin olive oil

medium
yellow onion
diced

carrots
peeled, diced
2
celery stalks
diced

cloves
garlic

tablespoon
Italian seasoning

smoked paprika

shredded cabbage coleslaw mix

cups
shredded, cooked chicken

teaspoons
apple cider vinegar

low sodium chicken broth
salt and pepper to taste
Instructions
In a large soup pot, heat olive oil over medium high heat. Add onion, celery, and carrots and sauté for 4-5 minutes until they begin to soften.
2 teaspoons extra virgin olive oil,
1 medium yellow onion,
2 carrots,
2 celery stalks
Add garlic and seasonings and sauté another 2-3 minutes.
4 cloves garlic,
1 tablespoon Italian seasoning,
1/2 teaspoon smoked paprika
Next, add coleslaw vegetable mix, shredded chicken, apple cider vinegar, and broth. Reduce heat to a simmer, cover, and continue cooking about 25 minutes, or until cabbage and vegetables are soft.

4 cups shredded, cooked chicken,
4 teaspoons apple cider vinegar,
6 cups low sodium chicken broth
Season with additional salt and pepper to taste. Enjoy!
