These Cheeseburger Tacos are an easy 15-minute dinner with all the flavors of a classic cheeseburger, from seasoned ground beef with crispy edges to melty cheddar, crisp lettuce, and burger sauce.
Make the burger sauce. In a small bowl, stir together the Greek yogurt, ketchup, Dijon mustard, pickle juice, and smoked paprika. Season with salt and pepper to taste, then set aside so the flavors can meld while you cook.

Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef, garlic powder, onion powder, salt, and black pepper, breaking up the meat as it cooks. Cook for 5 to 7 minutes until browned and cooked through.
Melt the cheese. Spread the beef into an even layer and sprinkle the shredded cheddar over the top. Let it sit undisturbed for 1 to 2 minutes until the cheese melts. This is where the magic happens, since the bottom of the beef gets those classic crispy burger edges while the cheese melts on top.
3/4 cup shredded cheddar cheese
Warm the tortillas. While the cheese melts, warm the tortillas in the microwave, a dry skillet, or directly over a gas flame for a few seconds per side.
8 small high-fiber flour tortillas
Build your tacos. Spoon the cheesy beef into the tortillas, then top with shredded lettuce, tomatoes, red onion, pickles, and a drizzle of burger sauce. Serve right away and enjoy!
