Ingredients

  • 4 sweet potatoes
  • 1 tablespoon avocado oil
  • ½ teaspoon Diamond crystal salt
  • ¼ teaspoon black pepper optional

Instructions

  • Preheat oven to 400°F and set aside a sheet pan.
  • Slice sweet potatoes in half, length-wise, then rub with oil, salt, and pepper.
    4 sweet potatoes, 1 tablespoon avocado oil, 1/2 teaspoon Diamond crystal salt, 1/4 teaspoon black pepper
  • Place sweet potatoes cut side down on the sheet pan, then roast in the oven for 30-35 minutes, or until sweet potatoes are fork tender and the edges have caramelized.
  • Let the sweet potatoes cool on the tray for at least 5 minutes, so they'll come over easier and with all the caramelized edge goodness in tact. Then serve and enjoy!
