Instructions
Preheat oven to 350°F and prepare a loaf pan by spraying with nonstick spray or lining with parchment paper.
Mash bananas very well (you can use a hand or stand mixer for this step, if it helps - I often do). Measure out 1 cup of mashed bananas.
1 cup mashed, overripe bananas
Add mashed bananas to a bowl, along with the rest of the wet ingredients. Stir to combine.
1/2 cup almond butter,
2 large eggs,
1/4 cup butter,
1/4 cup milk,
1/2 cup light brown sugar,
1 teaspoon vanilla extract
Add dry ingredients and stir until just combined.
1 1/2 cups white whole wheat flour,
1 teaspoon baking soda,
1 teaspoon cinnamon,
1/2 teaspoon salt
Pour batter into prepared pan. If desired, sprinkle the top with turbinado sugar.
1 tablespoon turbinado sugar
Bake for 50-60 minutes, or until a knife inserted in the center of the loaf comes out clean and not wet/ sticky.
Remove loaf from oven. Let cool in the pan for 10-15 minutes, then transfer the almond butter banana bread to a cooling rack to finish cooling.
Once cooled, slice and enjoy!
