Ingredients

cucumber slices

frozen cubed pineapple

spinach

light coconut milk

lime
juice and zest

fresh mint leaves
Instructions
Combine all ingredients in a high-speed blender and blend 1-2 minutes, until smooth and creamy. Add ice if needed to thicken smoothie, or additional coconut milk or water to thin smoothie.
Immediately pour into a glass and enjoy!
