Red Pepper Feta Dip (Htipiti)
This delicious red pepper and feta dip is inspired by traditional Greek htipiti. It's easy to whip up and makes a great appetizer, snack, or dip or sauce for veggies and meat.
Recipe yield is 1 1/2 cups.

Ingredients

feta cheese, cut in pieces

roasted red peppers
drained, cut in pieces

extra virgin olive oil

lemon juice

garlic

teaspoon
dried oregano

teaspoon
smoked paprika

teaspoon
cayenne pepper
(optional)

fresh parsley, chopped
(optional garnish)
Instructions
Add all ingredients (except parsley garnish) to a food processor.
Pulse on high a few pulses, then let blend for 1-2 minutes on high, until dip is smooth and creamy.
Transfer dip to a serving bowl and serve immediately. Enjoy!

Total recipe yield is 1 .5 cups. Serving size is 1/4 cup.
