Ingredients

For the Roasted Brussels Sprouts:

  • 1 pound brussels sprouts trimmed and halved
  • 2 tsp extra virgin olive oil
  • pinch salt and pepper

For the Maple Dijon Dressing:

  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar

Instructions

  1. Place brussels sprouts on a baking sheet and drizzle with olive oil, salt, and pepper. Flip brussels sprouts so they are all cut side down on the baking sheet. Bake at 350 degrees for 30-35 minutes.

  2. In a small bowl, whisk together maple dijon dressing ingredients. (Alternatively you can put them all in a small mason jar and shake until combined.)

  3. Drizzle the maple dijon dressing over the roasted brussels sprouts on the tray and toss to combine.

  4. Serve immediately and enjoy!
