Ingredients

For the Stir Fry:

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast sliced thinly
  • 4 cups bok choy chopped
  • 2 cups broccoli florets
  • 1 cup baby carrots
  • 1 cup red bell pepper sliced

For the Garlic Ginger Sauce:

  • 4 tbsp coconut aminos
  • 2 tbsp honey
  • 1 tbsp garlic minced
  • 1 tbsp ginger minced

Instructions

  1. Whisk together the garlic ginger sauce ingredients and set aside.

  2. Heat oil in a large skillet over medium-high heat. Add thinly sliced chicken and stir fry about 4-5 minutes, or until chicken is cooked through. Remove from pan. 

  3. Add vegetables to the pan and stir fry 4-5 minutes or until all vegetables are fork-tender.

  4. Add chicken back to the pan along with the garlic ginger sauce. Stir fry for one minute.

  5. Serve immediately or portion into individual containers for easy meal prep options. Can be served as is or with brown rice, quinoa, or cauliflower rice.
