You can substitute other vegetables - if you're using fresh vegetables you may need to add a small additional amount of water and may need less cooking time (add them after pasta has been boiling a couple minutes).
You can try other pastas/ pasta substitutes: I'd recommend once boiling, check the pasta after the low end of the cooking time on the package (i.e. if package says cooks in 5-7 minutes, check at 5 minutes).
