These Chicken Philly Quinoa Bowls make an easy weeknight dinner that can be customized to what you and your family enjoy and have on hand!free from: wheat/ gluten, soy, egg, fish, shellfish, tree nuts, peanuts (dairy optional)
Heat olive oil in a large skillet over medium-high heat.
Add mushrooms, peppers, and onions and saute for 4-5 minutes, or until vegetables are tender.
Add chicken, spinach, and seasonings. Stir until ingredients are combined and spinach has cooked down.
Serve chicken and vegetable mixture over cooked quinoa. Top with shredded mozzarella (pro tip: let the mozzarella get a little melty over the hot chicken and veggie mixture for a few minutes!).
Cooking for one or have leftovers? Save for another meal within the next couple days!
