Grain-Free, Gluten-Free Skillet Brownies with Raspberries

It’s no secret that I am obsessed with the classic chocolate and raspberry flavor combination. From past NTF desserts (and Valentine’s favorites!) like raspberry caramel chocolate cups and chocolate raspberry avocado pudding, all the way to my chocolate cheesecake with raspberry swirl wedding cake – I know what I like!

What I also really like, and truly need at this point in life, is simplicity. And who doesn’t appreciate simplicity, especially when it comes to making homemade healthier treats? We’re all busy, right?

That’s why instead of grabbing ingredients to make my own almond flour brownies from scratch (which I may do one day when I’m not 40 weeks pregnant!), I grabbed a box of Simple Mills Chocolate Muffin & Cake Almond Flour Mix (Amazon affiliate link).

Why I Love Simple Mills

I need to preface this by saying this is NOT a sponsored recipe! I truly enjoy Simple Mills products, love to stock my pantry when I find good deals, and we incorporate them into our lifestyle seamlessly. You can even see how I’ve used Simple Mills products in these two other non-sponsored recipes: rosemary garlic roasted cauliflower and cheese-stuffed grain-free mini rolls.

But what’s the deal with Simple Mills? Well, mainly – they have real simple, real food ingredients. Take the ingredients in the Chocolate Muffin & Cake Almond Flour Mix that I used in these raspberry skillet brownies:

That’s it! For comparison’s sake, here’s the ingredient list of a different gluten-free chocolate cake mix:

Rice Flour, Sugar, Cocoa Processed With Alkali, Potato Starch, Leavening (Baking Soda, Calcium Phosphate, Sodium Aluminum Phosphate), Pea Fiber, Contains 2% Or Less Of: Cellulose, Tapioca Starch, Canola Oil, Salt, Propylene Glycol Esters Of Fatty Acids, Mono And Diglycerides, Xanthan Gum, Cellulose Gum, Sodium Stearoyl Lactylate, Soy Lecithin, Whey, Sodium Caseinate, Palm Kernel Oil, Natural And Artificial Flavor, Citric Acid And BHT (Antioxidants).

Even though chocolate cake mixes aren’t something I use and make on a regular basis, I prefer Simple Mills. Their products much closer represent the ingredients I would use if I were making it from scratch myself.

How to Make Skillet Brownies with Raspberries

Now, while these skillet brownies with raspberries look sweet and impressive enough for your Valentine’s date night or galentine’s party, they’re actually incredibly simple to throw together.

Prepare the Simple Mills mix according to the package directions for brownies – you’ll need to add some eggs, coconut sugar, vanilla, and oil.

Then you just need to stir in some semi-sweet or dark chocolate chips and some frozen raspberries. Why frozen raspberries? The frozen raspberries stay together better as you’re stirring your mix, so you’ll get to bite into warm raspberry pockets when your brownies are done.

Prepare your skillet or pan with coconut oil to prevent the brownies from sticking, and then bake away!

What Size Skillet or Type of Pan Do I Need?

Since these were made to be a sweet Valentine’s Day dessert for two, I like to use a small six-inch cast iron skillet (Amazon affiliate link). I know not everyone has a small cast iron skillet, so while they’re pretty easy and inexpensive to pick up (I’ve gotten mine from ALDI and Amazon Prime), I also tested this recipe with mini muffin and regular muffin pans.

No matter the skillet or pan you use, it’s important to grease it with coconut oil so the brownies pop right out.

And SUPER important note: DO NOT overfill your skillet with brownie batter or it 100% will overflow! In general, you can fill your baking vessel halfway with brownie batter. But trust me on this – I tested a few batches before I got the ratios right to prevent overflow. Follow the recipe notes for the amount needed in each size container!

Instructions

  1. Heat oven to 375 degrees. Grease skillet or muffin tin with coconut oil.

  2. Mix together boxed mix, melted butter, eggs, vanilla, and coconut sugar. Stir in frozen raspberries and chocolate chips.

For 6-inch Skillet Brownies:

  1. Place 1/2 cup brownie batter into 6-inch skillet generously rubbed with coconut oil. Place skillets on a baking sheet to transfer in and out of oven easier. Bake for 20 minutes or until center is firm. Serve warm and enjoy.

For Regular Muffin Tin:

  1. Place 3 tablespoons brownie batter in each muffin tin that has been generously rubbed with coconut oil or lined with a parchment paper cup liner. Bake at 375 for 15 minutes or until center is firm. Serve warm and enjoy.

For Mini Muffin Tin:

  1. Place 1 tablespoon brownie batter in each muffin tin that has been generously rubbed with coconut oil or lined with a parchment paper cup liner. Bake at 375 for 8 minutes or until center is firm. Serve warm and enjoy.

Recipe Notes

  1. Since there are no preservatives in this mix, I recommend storing leftovers in the fridge up to 4-5 days or in the freezer up to 3 months.
  2. If desired, you can add more frozen raspberries and chocolate chips to the top of the brownie batter before baking, but I found they typically sink to within the brownie during the baking process.
  3. You can garnish with fresh raspberries, vanilla bean ice cream, shaved chocolate, or any other garnish you prefer. Nutrition information does not reflect garnish/ accompaniments.
