Sometimes you just want comfort food, right? And sometimes (or most of the time…) you want quick and easy food. I totally get it. I work a four day work week, and while having Fridays is definitely worth it, there are some weeknights when I don’t feel like putting much effort into dinner. I think this is when a lot of people turn to things like take out and delivery – heck, I’ll be the first to admit that at a different point in my life, I did the same thing! And while I get not wanting the added stress of making a meal, this Simple Sweet and Sour Chicken is truly so easy it’s totally worth it.
Plus, an added bonus if you’re like me and plagued with food allergies and intolerances: you can easily control all of the ingredients making it fit your needs! And if you don’t struggle with food allergies, you can still get all the flavor of a Chinese comfort food favorite but with way better nutrition.
I remember making a similar recipe in food lab one day back in my undergraduate nutrition program. While I’ve simplified it even more, I still am amazed that four main ingredients can mimic a Chinese food favorite so well (disclaimer: I haven’t actually had take out Chinese food in years due to the whole gluten thing). And total meal pro tip: cook some quick cooking basmati or brown rice (both have lower glycemic indexes) and steam some broccoli or other veggies while the chicken is cooking. Be warned that the whole meal comes together pretty quickly!
Simple Sweet and Sour ChickenPrint
- 2 large boneless skinless chicken breasts cut into 1-inch pieces
- 1 cup flour i.e. gluten free, whole wheat, brown rice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 Tablespoon olive oil
- 2 Tablespoons honey
- 2 Tablespoons apple cider vinegar
- Heat oil in nonstick skillet over medium-high heat.
- Combine garlic powder, paprika, and flour together. Toss the chicken pieces into the flour mixture until chicken pieces are evenly coated.
- Cook chicken in skillet until chicken is golden brown (it’s okay if it’s a little underdone in the middle – it will keep cooking with the sauce for a few minutes!). Tip: You may need to cook your chicken in two batches so as not to overcrowd the pan.
- Mix honey and apple cider vinegar together and pour over chicken. Cook for a few minutes, or until sauce becomes thicker and sticky.
