I'm bringing you an extra recipe post this week because, well, Friday is St. Patrick's Day and I wanted to make you something green! So I made you a honeydew avocado kale smoothie!
I'm often asked for my thought process when I'm making a new recipe, so I wanted to share my mental "behind the scenes" for this smoothie.
- Oh sweet! This beautiful honeydew is on sale for $1.99!
- This honeydew is so juicy and sweet - I bet it would be excellent in a smoothie.
- It's so juicy I don't even need to add any water or milk!
- Hmm, I need some veg. I know! Let's go full green for St. Patrick's Day!
- I have some kale to use up - I bet the sweetness of the honeydew would mask any potential bitterness! (I had a bad experience with a kale smoothie that tasted like freshly mowed grass one time...)
- Hmm, I need some creaminess. Ooh! Avocado! Avocaduh.

- Oh this would taste super good (and less earthy) icy cold.

And that's how this honeydew avocado kale smoothie was born! It's super simple, a little earthy, but in the best way possible. Honestly, I was really skeptical when I added the kale, but once I added a bunch of ice and blended it smooth, the husband and I both kept going back for more.
I will say, I didn't have any on hand, but I bet fresh mint would go very well in here! Please let me know if you try it! And whether you're enjoying green smoothies or more traditional cabbage and corned beef, enjoy your St. Patrick's Day, too!
Honeydew Avocado Kale Smoothie
Ingredients
- 4 cups chopped honeydew
- 2 cups kale leaves pulled from stem
- ½ avocado
- 2 cups ice or adjust to preference
- Optional: 2-3 fresh mint leaves
Instructions
- Blend all ingredients until smooth and fully incorporated.
