What makes this cranberry crunch broccoli slaw so awesome?

This broccoli slaw is a little fresh and healthier than traditional coleslaw. Mayonnaise is used, but in small quantities, and is made lighter and fresher with the sweet and tangy additions of agave nectar or honey and lemon.

While a cabbage base is typically found in coleslaw, I swapped that out for nutrient-packed broccoli slaw. Broccoli slaw not only packs many antioxidants and other nutrients, but it also has a great crunch and texture, as it is made from broccoli stalks and stems.

Dried cranberries are added for another burst of antioxidants, as well as a chewy tangy sweetness for more layers of flavor and texture. To round out the texture even more, sunflower seeds are tossed in for crunch.

There are a few ways you can customize this broccoli slaw to fit your preferences and needs.

  • Mayonnaise can use any type of mayonnaise, including those based from avocado oil, olive oil, or egg-less vegan mayonnaise.
  • Mayonnaise not your thing? Try using plain Greek yogurt.
  • If cranberries aren’t your thing, you can sub other dried fruit. Chopped dried apricots and apples go great, too!
  • You can use sunflower seeds or swap out/ add in other crunchy textures, too, like pumpkin seeds, hemp seeds, slivered almonds, etc.
  • Any liquid sweetener can be used, with honey and agave nectar having the best results.
  • Lemon juice can be swapped for lime juice or an acid, like distilled vinegar, red wine vinegar, rice vinegar, or apple cider vinegar.

Ingredients

  • ¼ cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp honey (can sub other liquid sweetener, like agave or maple syrup)
  • 2 cups broccoli slaw
  • ¼ cup dried cranberries
  • ¼ cup sunflower seeds (raw or roasted - unsalted or just lightly salted)

Instructions

  • In a medium-sized bowl, whisk together the mayonnaise, lemon juice, and honey for the broccoli slaw dressing. Set aside.
  • Combine the broccoli slaw, dried cranberries, and sunflower seeds. Add the broccoli slaw dressing and toss to combine.
  • The cranberry crunch broccoli slaw can be served immediately, or can be covered and refrigerated several hours in advance. Any leftovers can be covered and refrigerated up to 48 hours.

Use vegan mayonnaise to make the recipe egg-free and vegan.

  1. This is so simple, healthy & delicious! I made one slight adjustment, that I think takes it to a new level and that was I added a small (a little goes a long way) drizzle of TOASTED SESAME OIL!
    Still either way great, quick tasty recipe!
