This 5-Minute Avo Green Sauce is a simple, bright sauce you can use on pasta, burrito bowls, salads, sandwiches, and more. The base recipe just needs avocado, leafy greens, and citrus! It's vegan, gluten-free, dairy-free, and free of all of the most common top 8 food allergens.
Happy Friday, friends! How's your week been? For me, it's been one of those weeks where I feel like I have a few more balls up in the air that I'm juggling. All good stuff, but even good things come with time commitments and responsibilities.
Initially I was feeling a little down on myself for my perceived struggle with balance. But that's when I realized balance is a mirage (one that I'm tired of chasing). I've accepted that my life is a juggling act - I may have a lot of different responsibilities going on (aka the balls I'm juggling), even things that are really positive and enjoyable, but I can only really focus on the the task at hand. I'll get to those other balls in the air when they come back around again. 😉 And no matter what, just do my best! Worst case scenario, I drop all the balls and just pick 'em back up and start all over again!
In honor of time and everyone juggling a thousand things and always feeling like there's never enough time, I have a super simple recipe to share today that we're loving: 5-Minute Avo Green Sauce!
What the heck is avo green sauce?
In my house, it's what we've taken to calling a flavorful mixture of avocado + greens + citrus + water + s/p. Our favorite way to enjoy it is like this the other night, made while red lentil pasta was boiling. Actually I take that back - I was done making the sauce and cleaning the blender before the water was even boiling!
It's a really easy sauce, and really forgiving to customize how you like it. We've made it with spinach, arugula, baby mixed greens, etc. I personally love a blend of spinach and arugula. We've made it creamier when we've had extra avocados to use up, and also added more water to thin it down for more of a salad dressing consistency. We've also played around with adding different herbs. We always are huge fans of basil in my house, which typically pairs well with bright citrus flavors. And speaking of citrus, use what you have! Typically we make it with lemon juice, but lime juice goes well too, as does orange juice (made with orange juice makes it like a creamier version of my orange basil pesto that I paired with tiny hasselback potatoes!). We've also enjoyed adding some cilantro and re-purposing this sauce over enchiladas and burrito bowls!
You can use it as a pasta sauce, as a dip for 2-Ingredient Flaxseed Chicken Tenders, brush on baked or grilled fish or chicken, as a salad dressing, and pretty much however you want to!

5-Minute Avo Sauce
- 1 Haas avocado
- 4 cups dark leafy greens i.e. spinach, arugula, baby kale
- 3 tablespoons citrus juice i.e. lemon, lime, orange
- 1 cup water
- salt + pepper to taste
- Combine all ingredients in a blender or food processor and blend on high for 60 seconds, or until evenly combined.
