This recipe for Sheet Pan Orange Ginger Chicken & Broccoli uses one of my favorite easy weeknight dinner tricks – a sheet pan! Basically, with a sheet pan dinner, you just pile everything in one pan, it all cooks together, and dinner is served. The only other thing you need is some brown rice, or another complex carbohydrate (like sweet potatoes, quinoa, etc.). You can easily make instant brown rice while the chicken is cooking, or thaw some pre-made brown rice you stashed in the freezer (healthy kitchen hack: make double brown rice when you cook it and store half in the freezer for another night!).

Now, the flavorings here…oh my gosh. Seriously, I could not stop sneaking forkfuls of leftover chicken and broccoli. It is just so good and so simple! I do think it’s important to use fresh ginger in the sauce, because it just brings a different level of flavor. Here’s another hack for you: press the ginger through a garlic press to save time from mincing by hand. You can press your garlic in a garlic press, too, or just use the store-bought pre-minced garlic in a jar (shh, don’t tell, I use it too!).

Once you throw your broccoli and chicken on the pan, make the sauce and pour it over, you do have to wait 45 minutes for everything to cook. But during this time you can wash any dishes you dirtied, prep the rice, play with your kids, and shoot – even fit in a quick workout! Maximize that time!

Ingredients

  • 6 chicken thighs
  • 2 cups fresh broccoli florets
  • Salt + Pepper
  • Sauce:
  • 1 orange, juiced
  • 1 teapsoon minced garlic
  • 2 teaspoons minced fresh ginger
  • 2 tablespoons olive oil
  • 1 teaspoon honey

Instructions

Preheat oven to 350 degrees.

Place chicken thighs and broccoli on a sheet pan. Season the top of chicken and broccoli with salt and pepper.

Mix the sauce ingredients and pour evenly over the chicken and broccoli.

Bake for 45 minutes, or until internal temperature of chicken reaches 165 degrees.

Serve with brown rice, sweet potatoes, or another complex carb and enjoy a delicious dinner!
